Junod is a white absinthe crafted among the Jura Mountains in Pontarlier France. Made according to authentic traditions from a profile of eight botanicals. Popular among Parisian writers and artists serve 3 measures chilled water over 1 measure of Junod to create the traditional French drink.

Why was absinthe banned? There were two major causes for the prohibition of absinthe. In the early 20th century absinthe was demonized by the French wine industry in order to maintain marketshare and protect itself from competition. This was combined with various temperance moments that sought to ban alcohol in general.

Recipe

Traditional French Method
Add one part absinthe to a glass. Place one sugar cube on a absinthe spoon over the glass and drip ice water until the absinthe turns opaque.

Sazerac
Fill an old-fashioned glass with ice. In another glass, muddle 1 sugar cube and 3 dashes bitters, add 2 oz rye whiskey and some ice, stir until chilled. Remove the ice from the original glass, rinse with Absinthe Junod, then strain the cocktail into the frozen glass. Garnish with lemon peel.

When Ernst Hemingway came back from Europe he brought his love of absinthe back with him. He created the following recipe and it is named in his honor. Add 1 oz absinthe to champagne glass. Add iced Champagne until full. Drink slowly
